Lón agus dinnéar!

We had delicious ratatouille for our lunch today. We’ll also be having it for dinner with baked potatoes. Not very seasonal though. We were discussing this last night and I thought maybe I should try a more seasonal version with carrots, parsnips and potatoes. Worth a try. I’ll let you know how it turns out.

We got a lovely package in the post the other day from our Kiwi friends. Edmonds Cookbook, a classic Kiwi cookbook that used to be doled out for free to newly engaged couples. Straightaway I made the Chicken and Apple Hotpot for dinner. It was yummy. Recipe to follow.
